The Winter 2009 issue of the food-and-culture journal Gastronomica features a photo by Hans Gissinger from his 2005 collaboration with pastry chef Christian Escriba of legendary Barcelona bakery Escriba. The two teamed up to produce Tartas, a movie and exhibition in honor of the bakery’s 100th anniversary. The work centers on the explosion of a series of tarts, hence the title. “The exploding cake calls out for lightness, freedom, and the refusal of manipulation,” Gissinger explains in the text that accompanies the project, which can be viewed in its entirety here.
