“Tusk-to-Tail Dining in Hawaii”—that’s the name of the feature that Jeff Lipsky shot for the February issue of Bon Appétit, on stands now. Jeff joined writer Hugh Garvey on the big island as Garvey and the locals went hunting for wild boar and then enjoyed the fruits (or rather meats) of their labor at a resort. I asked Jeff about the shoot:
“They had me shoot film!!!! Loved that. Also loved the contrast from hunting (I did not shoot a pig) to the luxe resorts of Kona. I shot the story in November. Conditions were perfect—82 degrees and sunny.”
Jeff, who was commissioned by Bon Appétit photo director Bailey Franklin, previously shot a tofu feature in Kyoto for the magazine, as well as a story on the “foodiest town” in Maine (that would be Portland). And he has two more features appearing in Bon Appetit this spring. More on those soon. Till then, let’s let Jeff take us to Hawaii. Here’s a mix of his images that appear in the current issue, along with selections he sent me from his contact edit.

I’m here to hunt and eat wild boar, the latest ingredient in the booming Hawaiian locavore dining revolution. … I question my decision when, at
4:00 a.m., I try to wake up with a grande Kona coffee in the passenger seat of Kona Village executive chef Mark Tsuchiyama’s truck as we bounce along a ranch road. We’re following Wade Cypriano, a meat cutter; his son, Wayne; and his friend Kalena Honda. They have dogs, a gun, and more than
50 years of hunting experience among them. “Why would I
buy meat in a store?” asks Wade.
